Anna Does Sorted: Banoffee cupcakes

On Wednesday night Peter came over and asked me a question I've always wished someone would ask me, "Can we look at your YouTube playlist of cooking stuff and see what desserts there are?" At first I suggested we make the Nutella and salted caramel cookies but he shot that down so he opted instead for the banoffee cupcakes. I mean, we couldn't exactly go wrong with any of the Sorted Food choices but those cupcakes are DIVINE.

This was another recipe that's been around for some time that I never got around to making so even though I wanted those chocolate caramel cookies so bad I was actually pretty pleased that Peter wanted these instead. So off we went, Peter, Kelly and I, to the store to buy the ingredients. (Kelly came over so I could give her the poster I made for her Christmas present and got wrangled in to baking as well!)

As always, there was some conversion improv involved in making the cupcakes. The mix turned out quite thick so I was worried I'd messed up how much flour, brown sugar, etc. needed to be added. Kelly and Peter both put on faces of, "I don't know. I don't use the oven or bake," so I added a little water to maybe help with the consistency and hoped for the best. Turns out we did everything right, or some version of "right," and the cupcakes looked an awesome golden color on top when we took them out of the oven.

My favorite part of the banoffee cupcakes is the icing. Those who know me well know that I absolutely love frosting/icing. I always take corner pieces of cake, I lick all utensils used for frosting anything and I gladly eat chocolate frosting out of the can. The icing for these cupcakes was perhaps some of the greatest I've ever had. Using brown sugar as well as powdered sugar is definitely key.

Normally I hate baking but I've come to the conclusion that I like baking when I'm doing it with friends. Kelly and Peter made it totally bearable and infinitely more fun than if I'd done it alone. It definitely embodied what Sorted is all about: good food with good friends.

The 10 unfinished blog posts of 2013

Yes, I have 10 drafts sitting here in the abyss of my blogger account. That's what I have to show for blogging in 2013. The number of unpublished posts says more about me than the number I actually posted, I think.

Some posts got lost in the fray of coming up with new things to write about. And at this point they're just not important anymore.

Some posts aren't time sensitive, meaning they'll be published some day in the hopefully not too distant future.

Some posts were too time sensitive. I didn't finish them within a week of the event happening so they probably won't see the light of day. At this point I don't remember enough details to really do the events justice; I mean, I remember how I felt on those days but it's hard to put those feelings into words. Those things are best left as memories for me alone.

Some posts just became too hard to finish. Even looking back at one now, far-removed from the day I started writing it and the circumstances that provoked it, I wouldn't be able to finish it. And not for lack of words to say what I want to say; I still have those words.

In a sense, I'm glad a number of blog posts were never posted and that I blogged very little about life in the ending months of 2013. It means I was busy living life and not just recording it for people to read online. While I do believe that if life is worth living, it's also worth recording, there are also some moments that just need to be experienced. (Don't worry, the big events were still written down in my personal Moleskine journal)

On New Year's Eve, Stacy, Becca and I went to the beach, sat in the sand, wrote down things we wanted to let go of from 2013 and then burned those pieces of paper. My first two things burned I kept secret; they each burned something secret as well. All the rest we shared with each other out loud. Once it passed midnight, we then burned our hopes/dreams for the new year. They shared all of theirs and all four of mine were shared, and yes, there were only four.

But here's the thing: I won't be sharing any of those four things with anyone again. Those two pieces of paper I burned for myself alone and the four pieces of paper I shared and burned and the words on all of them are for the three of us alone in those minutes after the clock struck midnight. So yes, I'm sharing that overall experience here in this post but the actual experience of burning those hard times and those dreams isn't something to be recorded.

So here's to 2014, a year in which I hope to balance the living and the recording. And maybe I'll have even more unfinished blog posts to look back on.

A voice of reason

This morning I was almost late to class because I had to finish reading my friend Hannah's latest post on Literally Darling. It seems to be a fairly popular blog so I feel quite honored to know one of its writers. As I was reading this morning, and as I've read her stories in the past, I reflected on how Hannah and I became friends.

It somehow happened on Twitter. I'm not even sure exactly how we got to talking but we did. I was starting my sophomore year; Hannah was starting her senior year. The first time we met in person was in front of Sugar and Spice in the Cougareat. And we had an awesome lunch. We talked missionary friends, Harry Potter, roommates, dating lives and I'm pretty sure about faith/belief. It was the first of many lunch dates.

Then Hannah graduated from BYU and went off to Maryland and Washington DC, which is basically where all of her wildest dreams came true. At least, that's how I tell the story to my friends when I'm explaining who Hannah is. (It's an exaggeration of sorts but also totally true.) She started working at a really neat place. She reconnected with her childhood sweetheart and soon after they got engaged. They're happily married and go to bed early and do things like watch The West Wing/Friday Night Lights/The Wire instead of going out on weekends.

I was lucky enough to have a friend who knew Hannah's (now) husband so I got the chance to road trip with him, his girlfriend at the time and two of his roommates to her wedding reception. Here's 1, 2, 3, 4 posts about that trip.) It was a blast, the road trip and the reception. I probably talked to Hannah for all of three minutes that day but it was just amazing to be there. We met on Twitter and suddenly I was celebrating her marriage. My favorite part of that night, besides the delicious food of which I ate so much, was Hannah's wedding toast. She posted it on her blog about a month after the wedding and hasn't posted anything since. I loved hearing that story then and I love reading it now. It's just so Hannah.

The point to this whole post is just to say that some times you have friends who you don't get to spend nearly enough time with in person but who still affect your life in profound ways. Hannah was an incredible voice of reason while my boys were serving missions. That's probably her biggest claim to fame in my life thus far. Talking with her about that time was amazing. Now that my boys have been back a while and Hannah lives on the east coast and I'm still in Provo, we still find plenty to talk about though. The last time we actually saw each other, I'm pretty sure, was at her wedding.

Our conversations aren't usually very long and they happen almost exclusively over Twitter, email, text messages and the occasional Snapchat. I send her pictures of the mountains and LaVell Edwards Stadium and she can hardly handle it. These conversations almost exclusively include me saying, "I MISS YOU," and her replying, "I MISS YOU TOO. MOVE TO DC." She's ready and willing to jump back into my life whenever I need her to, armed with the advice only a BYU graduate and Harry Potter junkie could provide. She usually articulates quite eloquent responses to my queries and worries, yet still ending with phrases like, "Whatevs. I say go for it." She is nothing but encouraging on every front. I'm pretty sure she believes in my ability to get married soon more than I do.

Everyone reading this is probably wondering why I didn't write Hannah a personal email saying all of this stuff. And I'm not sure why I didn't. As I hurried to campus this morning, I just knew it had to be blogged. I like to think that everyone has a friend like Hannah in their lives. Or I at least hope that everyone has a friend like Hannah. Because people certainly deserve that kind of friend.

So thank you, Hannah, for being perhaps my most hilarious, kind and encouraging voice of reason.

Anna Does Sorted: Spicy corndogs

I've never been a fan of corndogs. Ever. Like, at all. They're disgusting. I don't understand why people are so obsessed with them. (Sorry, Hank Green.) I knew I needed to try this recipe though after going shopping with Ben a month or so ago. It's something we do together fairly often these days and on that particular night he found a giant box of frozen corndogs and was all excited because it was on sale. I scoffed at him and begged him not to buy it because A) frozen food is just not as good as other food you actually cook and B) corndogs are gross altogether. So a few weeks later when Sorted posted their own recipe for corndogs, I was ecstatic to give Ben an actually tasty dinner.

The ingredients were all quite cheap and the most difficult part of this whole process, I found, is dipping the hot dogs in the batter. I really don't think I did anything wrong when making the "corn" part of the corndog but it still seemed to be extra thick. I added some milk to thin it out which helped a bit but it still didn't look quite right. When it came to covering the hot dogs, wow, that was a strange struggle. I used the tip they gave in the video by covering the hot dog in cornstarch and then using a tall glass but it didn't quite work out. It's not that it didn't work at all but it just didn't work very well. The thickness of the batter definitely had something to do with it but I figured out a weird system of dipping the hot dogs on the skewers into the glass of batter and then using a spoon to make sure it was (for the most part) evenly distributed and totally covered. The frying itself was also much less intimidating than I thought it would be. I'd never submerged anything in oil before but of course I've heard any number of oil frying horror stories. Literally nothing happened besides my corndogs turning a nice golden brown.

Ben was super excited when he came in and found out I had made corndogs, plus the super simple dipping sauce of mayo, lime zest and cilantro. His face really was surprised. And even though they looked kind of weird, they were perfectly golden and perfectly cooked. Ben complimented them over and over which, coming from a corndog lover like himself, made me feel pretty good about the first attempt. He also said it was the best corndog he ever had and he loved the batter. I also found myself actually enjoying a corndog for the first time, so that was pretty exciting. I'll definitely be making them again.

As for the next up recipe, I'm really interested to try the tandoori chicken burger. Does that not look amazing?! And while I practically despise baking, I'm also quite enamored with the idea chocolate caramel cookies.

I suppose a mini-life update might also be in order so here goes:

  • A super long time ago now, Becca, Stacy and I went to Stacy's house to go boating and spend the night. It was awesome.
  • I've significantly improved at bowling in the last few weeks.
  • In the last month or so Peter and I have gone mini-golfing, almost finished "The Office," hit the streets longboarding a bunch, celebrated his birthday with lots of delicious food, gone to soccer and football games and there's definitely other stuff we've done as well.
  • Ben and I had a Friday movie night w/ just us a few weeks back. We watched Schindler's List, which neither of us had seen before. It was fun in so much as watching a movie about the Holocaust can be considered a "fun" Friday night activity.
  • My new thing for my friends' birthdays is making posters. So Ben's had a Lion King quote, Ryan's was from HottieBoombaLottie and Peter's had one from How I Met Your Mother. Becca's poster is up next and it's Doctor Who inspired.
  • I found my Flip cam! I thought I'd forgotten it in Wisconsin when I went home for Christmas.
  • I bought a plane ticket home for the BYU/Wisconsin football game. #gobadgers

Meals/snacks cooked by Badger: 3. Possibly more.

Visits to Yogurtland: 2.

Games of Spaceteam played: Too many to count already.

Wedding receptions I attended: 1. But it was the best wedding reception I've ever been to. #camgelaforever

Seasons of LOST I've watched: 3 1/2 and counting.

Pieces I've written for the Universe: 2. (The first on binge watching TV and the second on the importance of mentors)

Snapchats Kelly has sent me of her dogs: At least 5. Probably more.

Letters Margaret and I have both sent to/received from each other: Around 6.

Boating trips I've been on. 0, sadly. But I did enjoy a good rope swing.

Games of Wii Bowling Peter and I have played: Probably around 10.

Games of Wii Bowling I've won: I'm pretty sure it's 2 but he will vehemently disagree.
--------------------------------
All in all it has been a crazy summer. It's hard to believe that next week I'll be walking for graduation. And then the week after that Becca and I want to embark on an awesome little camping trip. And then it will almost be time for my final semester at BYU to begin. Where did the last four years go?

Last YouTube video I watched: Vlogumentary trailer (If you only ever watch one video I post, please make it this one. Expect a post solely dedicated to that trailer within the next few days.)

1 week down

A handful of pictures from what has made this first week back in Utah so awesome:

Plus, celebrating my new job w/ Ben by going out for ice cream; getting Chick-Fil-A with Stacy; catching up with Peter; eating an amazing dinner w/ DangerScorn; drinking Jones soda w/ Brandt and Badger.

I also found an illustration/comic that never ceases to make me laugh.

And tomorrow I head back to Wisconsin, meaning more lovely times with more lovely people.

Coney Island & Cameron Asay

Last Saturday Kelly, Stephanie, Amber and myself made the long and arduous journey to Coney Island and Brighton Beach. And by long and arduous I mean only an hour and a half by train. It wasn't quite perfect beach weather but it was overcast enough that it was hardly crowded at all.

This trip was most likely my favorite part of this whole New York experience. It was my first time at the Atlantic Ocean for one thing. I really loved it because it was the first time in months that I felt like I wasn't in a city. Standing in the water and sitting on the sand made me more relaxed than I have been in a very long time. And I don't just mean that in terms of how long I've been in New York. It's not that school is overly stressful but to be as relaxed as I was at the beach? I think we'd have to go back to Christmas break 2012. My biggest problem with New York is the fact that there isn't enough nature. You can't see the stars; there aren't houses with yards; there aren't rolling hills or mountains covered in trees. The beach felt like a whole other place than "New York City" or "Brooklyn." Nothing worried me while I was at the beach.

We also went to the New York Aquarium.
And I bought a new hat!
This weekend I tried to do something equally relaxing without having to go all the way to the beach. It's not so much that I decided to do these things but Cameron brought them up when we talked on Thursday night and he made me promise I would go on this quest, as I like to call it. So I dubbed Saturday "Cam's Quest."

1) My own personal quest was to get Jamba Juice. It turns out the closest Jamba Juice is at Columbus Circle inside the Whole Foods which is basically in the basement of a mall. Pretty nifty, eh?

2) After getting my Jamba, I got back on the train so I could be closer to a specific part of Central Park. I rode one stop from 59th to 72nd street, where I started what I promised Cameron I would do. He sent me to this peninsula near the boat house, across from a fountain and an angel statue. When I got to the edge of the peninsula, there was a nice big rock perfect for sitting on. The area I was at was obscure enough that I didn't see that many people throughout the hour or so I sat there. While the beach made me feel far from the city, sitting on that rock made me feel even farther away. It was a perfectly sunny day with a slight breeze. Trees surrounded me. I'm still not exactly sure of Cameron's reasoning for sending me to that place in Central Park but I'm glad he did. I just sat and thought about a million and one things, but in the good way of thinking about things. I didn't really come to any specific conclusions about life but some times you just need to sit on a rock at the park and think about how things are going.

3) Once I finished "finding myself" in Central Park, I headed to Hell's Kitchen to get some cookies. This was the funniest part of my Thursday night conversation with Cameron. He told me he wanted to buy me a cookie but obviously he's in Utah and I'm in New York so that wasn't super plausible. So then he started describing this cookie place in Hell's Kitchen that he didn't know the name of but was pretty sure was between 8th and 9th avenues. "You'll find it," he said. Through some astute Google searches on my part, I figured out it was called Schmackary's. And I've gotta say, those were some dang good cookies. They sell them 2 for $5 so I got one that was cookies and cream and another that was classic chocolate chip. So now when I go back to Utah, Cameron owes me $5.

What I loved most about going to the places Cameron made me promise to visit was feeling so connected to him. New York is Cameron's favorite city in the entire world. (He's told me that multiple times.) He's been very adamant about me enjoying my time here. Out of all my friends, Cameron is the one I've seen most recently on account of how a week after coming to New York he was here for the BFA Senior Showcase. (I'm pretty sure I wrote about how refreshing it was to see him just days after leaving Utah.) Before that he was still one of the last people I saw in Utah. When I was sitting on that rock in Central Park, I half expected him to come bounding down the pathway and climb up the rock to sit next to me. Part of me really did wonder if  he planned some elaborate joke in which he flew to New York just because and then decided he wanted to see me. The only thing that would've made those cookies better is if Cameron was there eating them with me. I love the fact that I was in places he once visited, places he'd made memories at. Being thousands of miles apart doesn't have to matter.

Another thing I've yet to mention is seeing "Once" the musical. Lion King was spectacular, of course. But "Once"... I think I loved it even more than I loved Lion King. One reason it was so special to me is because the lead male character is played by Arthur Darvill. Arthur also played my all-time favorite companion on Doctor Who, Rory Williams. I've been listening to the Broadway soundtrack ever since the show. We were in the sixth row and though our view was partially obstructed at times, it was still brilliant. Seeing Arthur as someone else besides Rory was great and made me appreciate even more the great actor that he is.

And now that it's Sunday, June 16 . . . I have less than one week left in New York. I fly back to Utah this coming Saturday. I'm mostly excited to go back because that's where my so called "real life" is. I left a lot of people behind when I came to New York. It's honestly been one of the best things I've ever done, living here, but there is something to be said for having a "family" at school. I also get to go home to Wisconsin for a week in July and I'm quite looking forward to that as well. All those people back in Provo mean a great deal to me. If there's one thing I've learned while I'm here, it's how much those friends love and care about me. "Cam's Quest" is just one example of how they've been looking out for me while I've been here. Like on Thursday night I also talked to Ben. After we'd been talking for about 5 or 10 minutes out of nowhere he says, "It's good to hear your voice." I don't think anyone has said that to me before. It definitely made my Thursday night a great deal happier and made me that much more ready to get back to my life.

Comfortable silence

In my book, one of the biggest indicators of a good relationship, whether that be with a friend or a romantic interest, is “talking” on the phone for an extended period of time.
Before getting ready for bed last night, I spent nearly 20 minutes on the phone with Peter. I'd seen him just the night before, but some times there are some friends you need to talk to more regularly than that. Probably less than 10 minutes of the time we spent on the phone together was us actually talking. The rest was us just sitting in silence.
That he was willing to sit on the phone with me in almost complete silence for 20 minutes? That’s pretty telling. And that it wasn’t the least bit rushed or awkward? That's even better. He didn't mind that I didn't have all that much to say. At no point did he say anything along the lines of, "That's it? That's all you've got?" and he easily could have.

The luxury of sitting in comfortable silence with another person, especially when you're talking on the phone, is one of my all-time favorite things. With some people the comfortable silence comes after getting to know each other a little bit. But with others it's quite inherent. The fact that you can spend time with someone else and just . . . be. There's no other word to describe that feeling besides awesome.

Friends who love

Last semester and already this semester I've had some pretty lovely experiences with friends who just do things for me when I ask them to and even friends who just do things for me because they decide to.

The first Monday back at school was fine until nightfall. I went to bed super early but couldn't fall asleep for a long time. I was just feeling too sick. So as I'm sitting there on my bed, wondering what to do, my dear friend Peter texted me, apologizing for not responding to a message I sent him that afternoon. Before I knew it, I was talking on the phone with him and explaining everything that was wrong. And because he's so wonderful, he decided to go buy me NyQuil. It wasn't particularly late at night, maybe only 10, but for someone who was sick it sure felt like it was super late. After bringing me the medicine he stayed for a little while, just talking with me and making sure I was okay. When he left he said if I wanted he'd come over the next morning to see if I was feeling any better. And that's exactly what he did.

The Saturday after that was just not a very good day. I wasn't really sick anymore but the day was just . . . off. I was sitting on the couch with Stacy moping and feeling so hungry. I hadn't gone grocery shopping yet and any food left over from before the break was gone. Becca came to the rescue that day. She herself needed food and she took it upon herself to buy things we could share and other things just for me, like Curious George fruit snacks and sweet potato fries. (She knows me far too well.)

No story of service would be complete without Jeff, though. The number of times over the past 2 1/2 years he's come through for me in a tight spot? So many. Jeff is my go-to guy in a sticky situation. He does everything he can to talk with me as soon as he can. He comes over whenever I ask him to. He lets me bum around his basement apartment in those rare moments when I get locked out of my apartment. (It just happened last week actually.) Jeff and I don't get to see each other nearly as often as we probably should but we're really good at stepping into each other's lives when we need to.

In general the boys of the Lava Lounge treat all of us pretty well. In recent weeks they've been especially great, though. They help convince me to go on trips to St. George and then make sure it's a fabulous time. They skip parts of church to talk with me in the hallway instead. They leave awesome parties to spend a little time with me and then go back to the parties to get me snacks. And every single thing they do ends with at least one great hug.

Margaret, however, wins the prize for greatest surprise. Just last week she dropped by the desk at work, leaving me a new CD and homemade chocolate chip cookies. That morning she sent me a message asking if I was working that day; I thought nothing of it since Margaret often drops by the desk. I was off doing something else when she actually came by but that almost made it even sweeter. It absolutely made my week.

These little moments of kindness happen all the time when I really think about it. Last week Stacy made banana bread for the apartment. Lorraine made pudding to share and then we watched The Office. Badger invites us all over for dinner a few times a month. I am blessed with an incredible family here at school. So if anyone I've mentioned happens to be reading this post: thank you for everything you do for me. And even if you weren't mentioned specifically: thank you as well.
